The Bottle: The oldest recorded sparkling wine is Blanquette de Limoux, which was apparently invented by Benedictine Monks in the Abbey of Saint-Hilaire, near Carcassonne, France in 1531.

The Producer: Founded in 1772 by Phillipe Clicquot, his widow Barbe Nicole Clicquot Ponsardin took over the business in 1805 at the age of 27 becoming one of the first business women of modern times.

The Why:The blend on the Yellow Label is about 50% Pinot Noir, 30% Chardonnay and the rest Pinot Meunier. Notes of yeasty brioche, vanilla and apple explode on the palate of this iconic wine.
