The Producer: Little is known of Il Colle's 1972 inception. What we do know is that they've always adhered strictly to traditional techniques: natural yeasts, no temperature control, long maceration on skins and no filtering.
The Why:This delicious red has floral notes of rose and mediterranean herbs. The palate is all luscious blue fruit along with hints of white pepper and cedar. Decant this wine if drinking now, otherwise cellar for 3 to 10 years.
