The Producer: Founded in 1778 by the Kato Family, it is currently managed by the 13th generation, Ariyoshi Kato. Though the brewery building is 100 years old, the brewery itself has been at the same location since its foundation.
The Why:This sake has a soft and subtle palate with green apple and lychee notes and a crisp and warm finish. It is best served chilled with lighter dishes like sushi or spicy Asian food. It has a Nihonshudo rating of +1.
