The Bottle: The St. Emilion area of Bordeaux was not a part of the original Bordeaux classification of 1855. Their classification happened in 1955, and has 3 categories: Premier Cru Classés A & B, and Grand Cru Classé.

The Producer: Sophie Fourcade, who quit her job as a lawyer to join the family business of winemaking in 1998, manages Chateau Côte de Baleau, along with the Cuvelier Family. It lies in the northeast of Saint Emilion.

The Why:This lovely, classic Saint Emilion blend is drinking beautifully right now. An earthy, dank forest nose moves into a palate with surprisingly lively fruit, along with notes of tobacco, leather, mint and herbs.
