The Bottle: Unlike Scotch which uses strictly malted barley, Irish whiskey is made with a blend of malted and unmalted barley and is kiln dried, resulting in a whiskey that tastes like the grain from which it's distilled.

The Producer: The oldest licensed whiskey distillery in the world, Bushmills started in 1608. They are the only Irish distillery still using malted barley in all of their whiskeys.

The Why:Aged in sherry and bourbon barrels, this Irish whiskey has notes of toasted vanilla, carmelized honey and a distinct summery fruitiness.
